Meet Dr. Clay: Connecting Farm Roots with Lifelong Wellness.

Tucked in Alabama’s Black Belt—my family’s small farm, The Charleston Farm, was where I grew up. The land was rich, the history even richer, but the region also faced some of the highest rates of chronic disease in the country. Life on the farm meant early mornings, long days of hard work, and learning the value of dedication from my father and grandfather. ​

 

Food was always at the center of our lives. We grew it, shared it, and preserved it with care. But even with all the fresh produce around us, I saw firsthand how many people—my own mother included—still struggled with preventable health issues. I started to wonder: how could something as simple, as essential, and as powerful as food have such an impact on our health? ​

 

After high school, I left the farm to follow my passion for nutrition. I became a Registered Dietitian and later earned my Doctorate in Public Health. On that journey, I found my calling—empowering communities with the knowledge and tools to connect food, health, and daily habits. ​

 

Today, with four generations still working the farm, I’m blending those deep agricultural roots with my training in nutrition education. Whether I’m teaching out in the fields or speaking at local events, my mission is the same: to nourish minds, bodies, and communities—starting with the lessons my father and grandfather passed down to me, all those years ago.
